Easy Split Pea Soup
Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 1 teaspoon curry powder
- 1 cup split peas
- 3 cups vegetable stock
- 1 teaspoon salt
Preparation Instructions
- Sauté the vegetables—Heat oil in a large ceramic non-stick saucepan or Dutch oven over medium-low heat. Add onion, celery, and carrot sauté for about 5 minutes.
- Make the soup—Add water, peas, and salt. Simmer, stirring occasionally, until peas are soft and soup is very thick—from 50 minutes to 1 1/2 hours.
Tips
For beans, absolutely. But split peas cook quickly, so there’s no need for extra prep work.
